Design Approach

The two fit-outs translate Sergio’s identity into environments tailored to distinctly different customer journeys. At Barangaroo, the compact footprint prioritises efficient service, clear circulation and elegant displays for bite-sized pastries, whole cakes, savoury brunch options and coffee. At Sydney Fish Market, the larger format supports a premium sit-down experience, with a more relaxed atmosphere suited to high-tea-inspired brunch, exclusive pastries, crafted cakes and longer visits. Across both locations, thoughtful planning and refined presentation maintain a cohesive Sergio experience while allowing each venue to respond naturally to its precinct.
